L.A. is the spiritual home of all things open-faced, toasted, and topped with deliciousness: from Sqirl’s legendary ricotta toast to everyone and their sister’s avocado toast. At Highly Likely in West Adams, chef Kat Turner is the hostess with the mostess toasts (sorry!). Her menu frequently features toasts topped with seasonal fruit jams and she consistently serves (and sells out of) an earnestly tasty, ironically named “ubiquitous avocado toast” topped with spicy s’chug sauce and sprinkled with furikake. So when we approached her to make a ricotta toast topped with California prunes we weren’t surprised when she over-delivered, simmering the earthy sweet fruit with Chinese five spice, mirin, and tangy-salty umeboshi plum vinegar until it reduced into a luxurious jam. Korean chili flake and micro basil add heat and pop, and salted peanuts deliver umami crunch. On a thick slice of toast with a layer of creamy ricotta, it’s new wave, next-level nostalgia.
